When you think about a classic Texas smokehouse, tequila isn’t the first thing that comes to mind. But maybe it should. The subtle citrus notes and spicy aromas from barrel aging make crafted tequilas the perfect complement for the sweet and spicy flavors of contemporary smoked meats and seafood.

Barrel & Bones, the craft smokehouse located in The Colony at 2801 Plano Parkway, is partnering with Insolito Tequila to host a one-of-a-kind tequila dinner at 7 p.m. Wednesday, May 1.

 

 

The menu features three lavish courses, each served with a specially paired cocktail featuring Insolito’s line of tequilas. The menu includes:

First Course

Spring Berries Ceviche with a Kumquat Margarita

  • Strawberry and lime marinated jumbo shrimp and whitefish, red onion, green tomato, cilantro, avocado, strawberry crumbs, nixtamal corn tostadas
  • Insolito Blanco, muddled kumquats, lime juice, Cointreau, hibiscus float, chile threads

Second Course

Chayote and Watermelon Salad with a Cucumber-Mint Collins

  • Compressed chayote, watermelon, charred avocado, watercress, garlic chips, whipped requesón, honey-lime vinaigrette
  • Insolito Reposado, cucumber, mint, lime juice, lemongrass simple syrup, club soda

Third Course

Roasted Lechon with a Tequila Old Fashioned

  • Slow-roasted whole pig, lemongrass rice, drunken beans sauce, habanero pepper curtido, homemade tortillas
  • Insolito Añejo, Xoco bitters, demerara sugar, Luxardo cherry

The Herrera Brothers, Octavio and Alberto, built the Insolito distillery high in the Sierra del Tigre mountains of Jalisco, Mexico, where the hot days and cool nights allow for a unique aging process. Their tequilas are created using a slow fermentation process enhanced by the altitude, weather and natural spring water. They are twice distilled—in stainless stills instead of copper, preserving the authentic 80% highland and 20% lowland Blue Weber agave, to provide a smooth, clean finish. Finally, each tequila is aged in new American Oak Barrels.
