Fish City Grill and Half Shells Oyster Bar & Grill is celebrating 20 years of serious seafood this November. 

Bill Bayne opened the first Half Shells in the Snider Plaza shopping center in November 1995. The original restaurant featured a simple menu of shrimp, catfish and oysters. The operation quickly expanded, opening a second location in Plano at Legacy Town Center.

Bill and his wife, Lovett, soon formed their own company and expanded the restaurant concept to become “Fish City Grill”. While the two original restaurants have remained Half Shells, Fish City Grill has since grown to 16 locations throughout four states – Texas, Oklahoma, Arkansas and Florida.

Fish City Grill’s motto “Friendly Folks Serious Seafood” rings true to the company quality and values that Bill and Lovett envisioned when opening the original Half Shells restaurant. Bill and Lovett strongly value the quality of relationships and align their business and employees with those standards. Many Fish City Grill employees come to the company to stay, and two restaurant managers have been with the company since its inception in 1995.

“Lovett and I, along with our numerous employees and partners, have a passion for people and for seafood,” said Bill Bayne, commonly referred to in the company as Chief Seafood Officer. “Since the beginning, 20 years ago, we have made it our mission to provide superior quality food with unparalleled service in a neighborhood joint where everyone is comfortable”. 

A 20th anniversary celebration will take place at Half Shells – Snider Plaza on Saturday, November 14th, featuring live music, entertainment, and of course – lots and lots of oysters.
