Since its opening last fall, Black Agave has been lauded for its scratch cuisine and cocktails that celebrate the cuisine of both Mexico and Texas. As the season heats up, the Mercer Boardwalk restaurant is adding new menu items perfect for our Texas summer.

 

The Mex-Tex Shrimp Cocktail ($19.99) includes chilled shrimp, cucumber, tomato, roasted corn, peppers, onion and celery served in a zesty tomato broth. The Taquitos de Camarones ($13.99) showcase crispy tortilla-wrapped shrimp served with Baja slaw and a jalapeño aioli. The Picadillo Chile Relleno ($17.99) reinterprets a traditional favorite and includes a chorizo, potato and Oaxaca cheese-stuffed poblano with house-made salsa ranchera, rice and beans.

There are some exciting additions to the cantina menu as well. A new spicy, jalapeño margarita celebrates a classic cocktail in a more contemporary way. And, recognizing the sophisticated palate of the Black Agave diner, the restaurant has updated its wine list to offer an array of new selections chosen specifically to pair with the restaurant’s cuisine.

Fairmont Dallas welcomes three staff members to new positions including Lin Mandich being named Director of Catering Sales, Trevor Tkachyk as Director of Conference Services, and Jose Perez as Director of Banquets.

 

Reporting to the Director of Sales & Marketing, Lin Mandich will be responsible for creating and maintaining client relations, achieving revenue goals, and delivering exceptional food & beverage offerings for guests as Director of Catering Sales. 

 

Mandich brings over 20 years of experience in the luxury hotel and event industry, along with a genuine passion for creating unforgettable experiences. She previously held a position at The Plaza, a Fairmont-managed hotel, where she began her career as a management trainee.

 

“I am thrilled to return to the Fairmont family at Fairmont Dallas,” Lin Mandich said. “I look forward to working with the team and developing relationships with current and future clients.”

 

The Fairmont Dallas team was eager to promote Trevor Tkachyk to Director of Conference Services from his previous role as Director of Banquets. Reporting to the Director of Sales and Marketing, Tkachyk will oversee the Conference Services team for the 545-room hotel, which is home to several major annual conferences in Dallas. 

 

Tkachyk brings over fourteen years of experience to the position including experience from previous positions within the Fairmont portfolio. He previously served as the Food and Beverage Manager/Assistant Director of Banquets at Fairmont Dallas, Interim Director of Banquets and Assistant Director of Banquets at Fairmont San Jose, and Assistant Director of Banquets and Outlet Manager at Fairmont Jasper Park Lodge. 

 

“I am excited to continue my journey with Fairmont,” Tkachyk said. “I am eager to use my experience and leadership to help our team provide the best service for our guests and my team."

 

In his new role, Jose Perez will oversee the organization of banquets, ensuring implementation and consistency of the Fairmont standard. He most recently worked as Director of Banquets at Fairmont Washington D.C., and prior to that, he served as Food and Beverage Events Manager at Rosewood Mansion on Turtle Creek. Perez brings over 19 years of hospitality experience and leadership to his new position.

Sweet Tooth Hotel, Dallas’ original interactive art museum, is hosting its second annual party for Bastille Day, which marks the fall of the Bastille prison and the beginning of the French Revolution. Population is exploding in Grayson County, largely due to industrial growth in both Sherman and Denison. The small city of Dorchester is primed to become an in-demand address with its location between Sherman and Gunter. Centurion American Development Group is beginning construction this week on a sizeable development, Cottonwood, and will bring an impressive array of builders to create this master-planned community.

 

 

This 678-acre development sits just north of McBee Road and extends all the way to FM 902. Cottonwood will include approximately 2,156 residential lots spread among the five phases of the development. Homebuilders currently under contract for the first three phases of the development include DR Horton, Beazer Homes, Pulte and M/I Homes. The first lots of phase 1 are planned to be delivered to homebuilders in late Q1 2026.

 

Cottonwood will offer a wide range of community features, including two amenity centers with open spaces and trails. Additionally, there is land allocated for two schools to be built within the neighborhood including adjacent park space.

As it prepares to celebrate its thirtieth year in operation, Fish City Grill has named Molly Winkler as its new Executive Chef.

Winkler comes to Fish City Grill most recently from Imperial Fizz, where she served as Executive Chef for TJ’s Seafood in Dallas. Following her culinary education at the Art Institute of Dallas, Winkler did a stint training at Walt Disney World before moving to a variety of culinary leaders. In North Texas, she’s also served as a Corporate Chef for Lombardi Family Concepts and as Executive Chef at Happiest Hour.

Fish City Grill and Half Shells co-founder Bill Bayne sees Molly’s selection as a part of a more extensive brand strategy.

“We decided to bring in an accomplished Executive Chef to lead our culinary direction,” said Bayne. “As we seek to stay relevant with our current Customer base, we also want to be able to appeal to a younger but still mature demographic by offering newer menu and chalkboard items that are on trend, fresh and unique. Molly will be a key leader in ensuring our brand’s relevance by enhancing our menu, our culinary execution and seafood expertise.”

Winkler is excited to share her extensive seafood history with customers at Fish City Grill and Half Shells.
