Terri's Carrot Pineapple Cake

The is a great recipe that is easy to make. 

  • 2 cups all-purpose flour
  • 2 and 1/2 tsp baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar

 

  • 2 cups shreddred carrots
  • 1 and 1/4 cups vegetable oil
  • 4 eggs beaten
  • 1 (8-1/4oz) can crushed pineapple - undrained
  • 3/4 chopped pecans

 

Combine first 5 ingredients in a large bowl, sitir in carrot, oil, eggs, pineapple and pecans.  Mix Well.  Pour batter into a greased and floured 13x9x2 baking pan.  Bake at 325 degrees for 45-55 minutes.  Cool Completely

Cream Cheese Frosting

  • 1/2 cup butter
  • 8 oz package of cream cheese
  • 16 oz package of powered sugar
  • 1 tsp vanilla extract

Cream butter and cream cheese.  Gradually add powdered sugar, but until light and fluffy.  Stir in vanilla.  (I add some orange rind, and maybe a tsp orange or orange pineapple juice, if I have it)
