I made this salad at the beach (Boca Grande) and everyone loved it so much that we had it every night for 3 weeks!
- 3 heads of Romaine or a Box of Spring Mix Salad
- 1 bunch of scallions
- 1 lemon
- 1/4c to 1/3c olive oil
- SHAVED Parmesan Cheese
- Pine Nuts - Optional
- Garlic Salt and Pepper
Mix the salad stuff together. Put in Cheese and Pine Nuts. Squeeze juice of one lemon on top of salad and pour in olive oil. Shake on Garlic Salt (Mortons Steak Salt work too) and Pepper.
Note: The origin of this recipe is from my brother Robert. He used Arugula, just salt and pepper and no nuts.
