Pulled Pork Pizza with Homemade Barbecue Sauce

Homemade Barbecue Sauce

Ingredients:

1 cup ketchup

2 tablespoons spicy brown mustard OR yellow mustard

1/4 cup blackstrap molasses OR dark brown sugar

2 tablespoons lemon juice

1 teaspoon onion powder

 

1/2 teaspoon sea salt

1/8 teaspoon ground ginger

1/2 teaspoon chipotle chile powder

1/4 teaspoon freshly ground black pepper

Directions:

Combine all ingredients in a small saucepan.  Whisk to combine.  Set pan over medium heat and continue to whisk until mixture begins to bubble, about 5 minutes.

Continue to whisk and cook until mixture has thickened and slightly reduced, about 10 more minutes.

Yields around 1 cup of barbeque sauce

Pulled Pork Pizza

Ingredients:

For the pizza:

1 whole wheat pizza crust (I love Portland Pies)

1/4 cup homemade barbecue sauce or brand of your choice

6 oz. fresh mozzarella cheese, cut into 1/2 inch slices

1 cup pulled pork (I shredded some Sweet and Spicy Crock Pot Pork Roast and tossed it with 1/8 cup of homemade barbeque sauce)

1/4 cup sliced scallions (green onions)

Directions:

Preheat your oven to 475.  While your oven is preheating, remove the pizza crust dough from the refrigerator and let it sit at room temperature for 20 minutes.  Lightly dust your baking sheet with cornmeal or flour.

Stretch the pizza dough into an 8 x 12 rectangle.  Spread the barbecue sauce in a thin layer over the top of the crust. Arrange the mozzarella slices over the pizza crust. Add the pulled pork on top. Bake for 20 minutes.

Remove from oven and immediately sprinkle the scallions on top. Serve immediately.
