It doesn't get easier than this for summer cooking!  This back to basic recipe will surprise you!

1 head of Cauliflower (serves 2-3)
Olive Oil
Sea Salt
Cracked Pepper
Cookie Sheet

Preheat over to 425 degrees

Wash the Cauliflower well and break off the florets.  Grease the cookie sheet well with a good olive oil.  Place Cauliflower in a single layer and generously sprinkle with olive oil.  Add salt and pepper. 

Cook for 15 minutes and then turn Cauliflower and add more olive oil.  Cook for an additional 15 minutes or to desired tenderness.  The roasting method caramelizes and browns the cauliflower nicely and gives it a sweet flavor...

Notes:  You can use regular olive oil, as well as regular salt and pepper.  I have learned that using good quality ingredients make a difference when cooking minimalistically.
