Saffie’s Easy Corn Bread Stuffing
- 2 cups chopped celery
- 1 cup chopped onion
- 1 package of jiffy corn muffin mix (made with apple juice)
- 1 tablespoon Sage
- 6 pieces of bread (milkfree for Robert) chopped into little square pieces
- Chicken Broth
- 4 hard boiled eggs chopped

Cook the jiffy mix the day before and chop up the bread into little squares
Cook the eggs
Mix everything together and put in a pan greased with olive oil.
Cook at 325 for 35 minutes covered and then cook uncovered for 10 minutes
Mama’s Cornbread Stuffing (from Saffie’s memory since I can’t find her recipe)

- 2 cupped chopped celery
- 1 cup chopped onion
- I package Jimmy Dean Sausage (in the roll)
- I package of Pepperidge Farm Herb stuffing mix
- I pan of Mama’s cornbread
- ¼c of fresh parsley chopped up
- 1 tsp sage
- 1 egg beaten
- 1 cup chicken broth
Cook Sausage, celery and onion and drain well.
Mix an equal amount of cornbread and stuffing mix, parsley and sage. Mix the egg lightly into the broth and blend in with the stuffing stuff.
Cook at 325 for 35 minutes covered and then cook uncovered for 10 minutes
