A very old high school friend recently asked me for my mother's yellow squash recipe. Amazing how easy and how much it was loved!
- 6 Yellow Squash
- 1 Onion
- 2 Tablespoons Butter
- Salt & Pepper
Slice the yellow squash in small round pieces. Chop up the onion. Put in a medium size pan and cover with water. Bring to a boil and cook at medium for 15-20 minutes until tender. Drain off the water and mash all with a fork - leaving it a bit chunky. Stir in butter, salt and pepper to taste.
My big boy is allergic to milk so he is not able to have butter. I have substitued olive oil for butter and have used Lawry's season salt in place of salt and pepper
