A fun twist on the original:
12 hard cooked eggs, peeled, cut in half and yolks mashed in a bowl
¼ cup mayonnaise
2 T butter softened
1 T sugar
2 tsp. black pepper
¼ tsp. salt
½ cup frozen chopped spinach, thawed, drained and squeezed dry
¼ cup bacon crumbled (set aside to sprinkle over the top of the filled eggs)
Combine the thoroughly mashed yolks with the next 6 ingredients and mix well. Fill the whites evenly with the mixture. Sprinkle the filled eggs with the crumbled bacon. Refrigerate till needed. Super yummy with burgers!
